05 - Arrange potatoes in a single layer on prepared baking sheet without overlapping.
06 - Roast for 25-30 minutes, flipping halfway through, until golden brown and crisp at the edges.
07 - Transfer to serving platter. Sprinkle with fresh parsley and flaky sea salt if desired. Serve hot.
