# How To Make It:

- Combine chicken strips with 1 tablespoon olive oil, lemon juice, oregano, cumin, paprika, salt, and black pepper in a bowl. Mix thoroughly and let marinate for 10 minutes while preparing vegetables.
- Heat remaining 1 tablespoon olive oil in a large skillet or wok over medium-high heat until shimmering.
- Add marinated chicken to the hot pan. Cook for 4 to 5 minutes, stirring frequently, until chicken is cooked through and lightly browned. Remove from pan and set aside.
- Add onion and bell peppers to the same pan. Stir fry for 3 minutes until just tender and beginning to caramelize.
- Add zucchini and garlic to the pan. Continue stir frying for 2 minutes until zucchini is crisp-tender and fragrant.
- Return chicken to the pan along with cherry tomatoes. Cook for 2 minutes until tomatoes begin to soften and release juices.
- Add spinach and toss gently until just wilted, about 1 minute. Remove from heat immediately.
- Sprinkle crumbled feta cheese and fresh parsley over the top. Serve immediately with lemon wedges on the side.
