# Expert Advice:

01 -
  • The way maple syrup transforms into a sticky glaze that coats every carrot makes this feel fancy enough for company
  • Cumin adds this warm earthy note that somehow makes carrots taste entirely new and exciting
  • Its one of those side dishes that somehow disappears before anything else on the table
02 -
  • Overcrowding the baking sheet will steam the carrots instead of roasting them, so use two pans if needed
  • The maple syrup can burn quickly at high heat, so keep an eye on them during those last few minutes
03 -
  • Add the toasted sesame seeds right before serving so they stay crunchy and dont get soft
  • A squeeze of fresh lemon juice just before serving brightens all the flavors and cuts through the sweetness
