# Expert Advice:

01 -
  • It travels beautifully and tastes even better the next day, making it perfect for meal prep or picnics
  • The recipe is forgiving enough to use whatever vegetables you have lingering in your crisper drawer
  • Served warm or cold, it satisfies everyone from picky toddlers to hungry teenagers
02 -
  • Squeezing the moisture out of the zucchini is the most critical step, otherwise the center can remain unpleasantly damp even after fully baking
  • Letting the slice cool completely in the pan makes it much easier to slice neatly, though warm slices are hard to resist
  • The slice is fully baked when it pulls away slightly from the sides of the pan and the top springs back when gently pressed
03 -
  • For extra flavor depth, sauté the onion and bell pepper in a little olive oil before adding them to the mixture
  • If you only have a larger pan, the baking time will be reduced, so start checking for doneness at 30 minutes
